cheese and bacon loaf

75g streaky bacon, derinded and chopped
1 small onion chopped
250 SR flour
1 teasp salt
pinch of pepper
50g margarine
125g cheddar cheese grated
2 eggs
150ml milk
1 teasp made mustard
1 tablesp parsley

Place bacon in non stick pan and heat gently until fat runs. add onions and cook until soft. drain onto kitchen paper and leave to cool.
Sift flour, salt and pepper into a bowl. rub in margarine until mixture resembles breadcrumbs. stir in cheese, bacon and onion.
Beat the egges with the milk, mustard and parsley. add to dry ingredients and beat thoroughly.
Turn into greased 500g loaf tin and bake in a pre-heated moderately hot oven, 190'c/375'f/gas mark 5, for 45-55 minutes, or until firm and golden. leave in tin for 5 minutes then cool on wire rack.
