cottage cheese and date teabread
250g self raising flour
pinch salt
1/2 teasp mixed spice
25g sugar
50g butter
2 eggs
113g cottage cheese
4 tablesp milk
25g chopped walnuts
50g chopped dates.
sift flour, salt and mixed spice into a bowl. stir in the sugar and rub in the butter until the mixture resembles breadcrumbs. beat the eggs with the cheese and milk then add the dry ingredients, with the walnuts and dates. mix well then spoon into a greased 500g loaf tin. bake in a preheated moderate oven, 180c/350f/gas mark 4, for 45 minutes or until well risen and golden brown. leave in tin to cool 5 minutes, then turn onto a wire rack to cool.
