Sweet and Sour Chicken

Serves 4

4 chicken breasts
75g plain flour
2 tbsp olive oil
2 large garlic cloves, chopped
bay leaf
1 tbsp grated root ginger
1 tbsp chopped lemon grass
4 tbsp sherry vinegar
5 tbsp rice wine (or sherry)
1 tbsp clear honey
1 tsp chilli powder
125ml orange juice
4 tbsp lime juice
salt and pepper

Season the chicken breasts on both sides with salt and pepper to taste, then roll them in the flour until coated. Heat the oil in a large frying pan. Add the garlic and cook, stirring, over a medium heat for 1 minute. Add the chicken, bay leaf, ginger and lemon grass and cook for 2 minutes on each side.

Add the vinegar, rice wine and honey, bring to the boil, then lower the heat and simmer, stirring occasionally, for 10 minutes. Add the chilli powder, then stir in the orange juice and lime juice. Simmer for a further 10 minutes. Using a slotted spoon, lift out the chicken and lay to one side. Strain and reserve the liquid and discard the bay leaf, then return the liquid to the pan with the chicken. Simmer for a further 15-20 minutes.

Remove from the heat and transfer to individual serving plates. Serve with freshly cooked noodles and garnish with lime wedges.
