Cheese and Chicken Toasts

Serves 4 (as a light lunch)

250g wensleydale cheese, grated
250g cooked chicken, shredded
25g butter
1 tbsp worcestershire sauce
1 tsp dry english mustard
2 tsp plain flour
4 tbsp mild beer
4 slices of bread
salt & pepper

Place the cheese, chicken, butter, worcestershire sauce, mustard, flour and beer in a small saucepan. Mix all ingredients together then season to taste with salt and pepper. Gently bring the mixture to the boil, then remove from the heat.

Using a wooden spoon, beat the mixture until it becomes creamy in texture. Leave the mixture to cool.Once the chicken mixture has cooled, toast the bread on both sides and spread with the chicken mixture.

Place under a hot grill and cook until bubbling and golden brown. Serve immediately with salad leaves and cherry tomatoes.
