Oat Bars - perfect for lunch boxes
Ingredients
80g Butter
80g brown sugar
60g golden syrup
1/2 tsp Salt
130g porridge oats
35g dried apples, chopped
35g Dried apricots, chopped
25g dried cranberries
25g pumpkin seeds
2 tbsp sunflower seeds
25g desiccated coconut
Method
Preheat the oven to 180C/gas mark 4. Line and grease a 20cm square baking tin. In a saucepan, melt together the butter, sugar, golden syrup, and salt. Mix all the dry ingredients together in a bowl and stir in the butter and syrup mixture. Spoon the mixture into the tin and press down with the back of a spoon to level the surface. Bake for 18-20 minutes until lightly golden. Store in the fridge and cut into bars before serving.

They sound yummy - for anyone that is interested, I run a food co-op as part of Neeps and we place an order monthly for bulk items such as dried fruit, oats etc. New members are always welcome to join and collection is from Kildrummy (but delivery could be sorted out by arrangement)
