Lemon Sponge Pudding
125g caster sugar
50g butter
2 lemons
50g self raising flour
2 eggs, separated
1 cup milk
Beat the juice and rind of lemons with egg yolks. Cream butter and sugar and add to egg mixture with milk. Stir in sieved flour. Whisk the egg whites until stiff and, with a metal spoon, fold gently into the mixture. Pour into a buttered pie dish and place in another dish with 2 inches of boiling water in it (bain marie). Bake in a moderate (180C) oven for 25 minutes. When cooked the pudding has a layer of lemon curd on the base with a sponge top.
